Description

These homemade oatmeal raisin cookies offer an irresistible flavor combination, featuring oats, plump raisins, and a hint of cinnamon. Perfect for a quick snack or dessert, they are easy to make and a delightful addition to any gathering.


Ingredients

  • 1/2 cup (113g) unsalted butter, room temperature
  • 1/3 cup (65g) granulated sugar
  • 2/3 cup (120g) light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup (90g) all purpose flour
  • 1 1/4 cup (150g) quick oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup (140g) raisins


Instructions

  1. In a large mixing bowl, cream together the butter and sugars on medium speed for 3-4 minutes.
  2. Mix in the egg and vanilla extract until combined.
  3. Add the flour, oats, baking soda, baking powder, salt, and cinnamon. Mix on low speed until combined, then add the raisins and mix until just combined. Let the dough rest for 10 minutes.
  4. Preheat the oven to 350℉ and prepare a baking sheet.
  5. Scoop the dough into 2-tablespoon-sized mounds, spacing them at least 2 inches apart on the baking sheet. Optionally, top with more raisins.
  6. Bake for 10-12 minutes, until the edges start to turn golden brown.
  7. Use a glass to gently swirl around the cookies immediately after removing from the oven to shape them.
  8. Allow to cool for 5 minutes before transferring to a wire rack. Store in an airtight container for up to 4 days.

Notes

For thicker cookies, let the dough rest at room temperature as suggested.
Feel free to add chopped nuts for extra crunch!
Use old-fashioned oats for a heartier texture.
