- 2 tablespoons brown sugar
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon smoked paprika
- ½ teaspoon cayenne pepper optional
- 3 cups apple juice
- ½ cup apple cider vinegar
Instructions
- Trim the excess fat from the whole brisket, leaving about a ¼ inch fat cap.
- Remove any tough silver skin, particularly from the flat section.
Notes
For extra moisture, wrap the brisket in butcher paper during the cooking process.
Let the brisket rest for at least 30 minutes after smoking for better flavor and texture.
