Description

This Breakfast Strata with Bacon combines crispy bacon, sautéed mushrooms, and gooey mozzarella in a hearty dish that’s perfect for brunch or hearty breakfasts. Easy to prepare and packed with flavor, it’s sure to be a crowd-pleaser at your next gathering.

Ingredients

Scale
  • ½ pound bacon, chopped
  • 16 ounces baby bella or button mushrooms, sliced
  • 1 cup caramelized onions
  • 5 cups stale Italian or sourdough bread, crusts trimmed and cut into 1" cubes
  • 2 cups shredded mozzarella cheese
  • ¼ cup chopped parsley
  • 5 large eggs
  • 1 ¼ cups milk
  • ½ teaspoon kosher salt
  • ¼ teaspoon white pepper
  • ⅛ teaspoon cayenne pepper
  • ¼ teaspoon dry mustard
  • ½ teaspoon dried thyme
  • ½ teaspoon onion powder

Instructions

  1. Heat a large, heavy skillet over medium-high heat.
  2. Add the chopped bacon and cook until crispy, then transfer to paper towels to drain, reserving one tablespoon of grease in the skillet.
  3. Add the sliced mushrooms and a pinch of salt to the skillet, stirring occasionally until browned.
  4. In a large bowl, combine the stale bread, crispy bacon, browned mushrooms, and caramelized onions. Mix until evenly combined.
  5. Stir in the chopped parsley and shredded mozzarella cheese.
  6. Spray a 2-quart casserole dish with vegetable spray and transfer the bread mixture into it, spreading evenly.
  7. In a separate bowl, whisk together eggs, milk, salt, white pepper, cayenne pepper, dry mustard, thyme, and onion powder. Pour the egg mixture over the bread layer in the casserole.
  8. Cover with plastic wrap and refrigerate for several hours or overnight.
  9. Before baking, remove from refrigerator and let sit for 30 minutes to come to room temperature.
  10. Preheat the oven to 375°F (190°C) and bake the casserole for 50-60 minutes until golden and puffed.
  11. Allow to rest for 10 minutes before serving.

Notes

Using stale bread helps absorb the egg mixture better for a moist strata.
Feel free to add your favorite vegetables or cheeses to customize this dish.
This breakfast strata is perfect for making ahead of time for brunch gatherings.
