- 2 cups taco meat cooked
- 2 cups chicken breast cooked & shredded
- ½ cup red and/or green salsa
- 1 cup mexican blend cheese shredded
- 1-2 tablespoon vegetable oil
- 6 flour tortillas or corn tortillas
- ¼ cup sour cream
- 1 cup lettuce chopped or shredded
- ½ cup tomato
- 1 avocado sliced or chopped
Instructions
- Preheat the oven to 450 degrees F and lightly coat a baking dish with nonstick spray.
- In separate bowls, mix the taco meat and chicken with 3-4 tablespoons of salsa.
- Place a spoonful of the mixture and a sprinkle of cheese near one end of each tortilla and roll tightly.
- Lay each rolled tortilla seam side down in the baking dish.
- Lightly brush vegetable oil over the top of each roll.
- Bake for 8-10 minutes until golden brown.
- If needed, place on a paper towel-lined plate to drain any excess oil.
- Serve with desired toppings and enjoy!
