- 2 boneless, skinless chicken breasts sliced into thin strips
- ½ cup red bell pepper sliced
- ½ cup yellow bell pepper sliced
- ½ cup red onion sliced
- 1 cup corn kernels thawed if frozen
- ½ cup black beans drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- 1 tablespoon lime juice
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ ripe avocado
- 2 tablespoon greek yogurt or sour cream
- 1 tablespoon lime juice
- 1 clove garlic
- ½ teaspoon salt
- 1 cup cooked rice white, brown, or cilantro-lime rice
- 2 teaspoons fresh cilantro chopped
- 1 tablespoon crumbled cotija cheese

Instructions
- In a mixing bowl, combine the chicken, bell peppers, and onion with olive oil, smoked paprika, chili powder, cumin, garlic powder, lime zest, lime juice, salt, and pepper. Allow to marinate for 10 minutes.
- Preheat the air fryer to 400°F. If needed, line the basket with parchment paper.
- Arrange the chicken and vegetable mixture in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through, until the chicken is fully cooked and the vegetables are slightly charred.
- In a blender, combine the avocado, Greek yogurt, lime juice, garlic, and salt. Blend until smooth, keeping the texture thick enough to scoop onto bowls.
- In serving bowls, layer the cooked rice, then top with the air-fried chicken and vegetables, corn, and black beans. Add the avocado-lime cream on top, garnishing with cilantro and crumbled cotija cheese. Serve with lime wedges.
