Ingredients
Scale
- 4 tablespoons (56g) unsalted butter
- 2 cups (240g) all-purpose flour
- ¼ cup (32g) cornstarch
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 ½ cups (360ml) buttermilk
- ¾ cup (180ml) milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the waffle maker.
- Melt the butter and allow it to cool slightly.
- In a large bowl, combine the flour, cornstarch, sugar, baking powder, baking soda, and salt, whisking together.
- In another bowl, crack the eggs and add the buttermilk, milk, and vanilla extract. Whisk until well combined and then gradually whisk in the melted butter.
- Pour the wet mixture into the dry ingredients and whisk until just blended; do not overmix.
- Cook the waffles according to the manufacturer's instructions until they are golden and crisp. Waffles are done when a small amount of steam escapes from the sides of the waffle maker. Serve immediately or keep them warm in a 200°F oven while making more.
Notes
Use whole milk for a richer taste.
For homemade buttermilk, mix 1 ½ cups of milk with 1 ½ tablespoons of vinegar or lemon juice and let it sit for 5-10 minutes.
These waffles freeze well; just reheat in a toaster or oven when ready to enjoy.
