- 2 ripe bananas, well mashed (about 1 cup or 240 g)
- 2½ cups old-fashioned rolled oats
- 1¾ cups unsweetened plant milk, i use soy milk
- ¼ cup maple syrup, or brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract, optional
- ¼ teaspoon salt
- 1¼ cups fresh or frozen blueberries, divided
Instructions
- Preheat the oven to 350°F (180°C) and lightly grease a 9×9-inch (23×23 cm) square baking dish with nonstick spray.
- In a large bowl, combine all ingredients except for the blueberries, mixing until well combined. If possible, let the mixture rest for 5 minutes before adding the blueberries.
- Fold in 1 cup of blueberries, and transfer the mixture to the prepared baking dish, spreading it out evenly.
- Sprinkle the remaining ¼ cup blueberries over the top and press them gently into the mixture.
- Bake for 30-35 minutes or until set and lightly golden on top, ensuring the center feels firm without any jiggle.
- Allow to cool slightly before slicing and serving with dairy-free yogurt, coconut whipped cream, or your choice of toppings.
Notes
For added sweetness, adjust the maple syrup or brown sugar according to your taste.
Feel free to substitute blueberries with your favorite berries or fruits.
