Description

Sweet Potato Blueberry Banana Waffles are flavorful and easy to make. These waffles combine the natural sweetness of bananas and blueberries with nutritious sweet potatoes, perfect for a quick breakfast or snack.


Ingredients

  • 1 egg
  • 1/2 cup plain yogurt full-fat is great for littles
  • 1/2 cup milk
  • 1 cup flour all-purpose or whole wheat
  • 1 tsp baking powder omit if under 1 year old
  • 1/2 tsp cinnamon
  • 1 tbsp melted butter or coconut oil
  • 1/2 small sweet potato mashed (about 1/3 cup)
  • 1/2 ripe banana mashed
  • 1/4 cup blueberries mashed or finely chopped for younger babies


Instructions

  1. Steam the sweet potato until very soft. Mash it together with the banana until smooth.
  2. In a bowl, mix in the egg, milk, and yogurt.
  3. Add the flour, baking powder (if using), and cinnamon to the mixture, stirring well.
  4. Gently incorporate the blueberries into the batter. Allow it to rest for 3–5 minutes to thicken slightly.
  5. Lightly grease the waffle maker and cook the batter until golden and fully cooked.

Notes

For a dairy-free option, substitute yogurt and milk with almond or coconut milk products.
Adjust the sweetness by adding a touch of honey or maple syrup if desired.
