Description

These Strawberry Lemon Cupcakes are a delightful treat with their fluffy texture and bright flavors. Easy to make, these cupcakes combine fresh strawberries and zesty lemon to create a vibrant dessert perfect for any celebration or casual enjoyment.


Ingredients

  • 1 ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 3-4 teaspoons fresh lemon zest
  • 1/4 cup vegetable oil

  • 1/2 cup water room temp
  • 1/2 cup greek yogurt full-fat
  • 1 egg room temperature
  • 2 teaspoons pure vanilla extract
  • a drop of yellow gel food coloring
  • 1 cup salted butter softened
  • 3 1/2 cups powdered sugar sifted
  • 4 tablespoons strawberry jelly
  • 2-3 teaspoons fresh lemons zest
  • 1 ½ teaspoons pure vanilla extract
  • a drop of red gel food coloring
  • 2-4 teaspoons whole milk to adjust


Instructions

  1. Preheat your oven to 350°F and line a 12-cup muffin pan with liners.
  2. In a large bowl, mix sugar with fresh lemon zest and rub between fingers to release oils.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt together.
  4. In a medium bowl, whisk vegetable oil, Greek yogurt, water, egg, and vanilla extract until smooth. Optionally add yellow gel coloring.
  5. Combine dry ingredients with wet mixture gently, mixing until barely integrated.
  6. Fill the lined muffin cups three-quarters full with the batter.
  7. Bake for 18 to 20 minutes, checking with a toothpick for doneness.
  8. Rest cupcakes in the pan for a few minutes, then transfer to a wire rack to cool completely.
  9. For frosting, beat salted butter until creamy, then mix in powdered sugar, strawberry jelly, lemon zest, vanilla, and milk, adjusting as needed.
  10. Once combined, stir the frosting gently to make it smooth.
  11. When the cupcakes are cooled, pipe or spread frosting on top of each.
  12. Admire your creation and savor the first bite.

Notes

Using good-quality liners helps prevent sticking and makes cleanup easier.
For a brighter color in the frosting, you can add a drop of red gel food coloring.
