- 3-4 pound corned beef brisket
- 1 ½ cup water
- 1 onion, cubed
- 1 pound potatoes, peeled and chopped
Instructions
- Remove the corned beef brisket from its packaging, discarding the liquid but keeping the seasoning packet. Place the brisket in the slow cooker.
- Sprinkle the seasoning packet over the brisket. Pour the water around the edges and add the cubed onion. Cover the cooker and set it to low for 8 hours.
- After 4 hours of cooking, add the chopped potatoes to the crockpot to cook alongside the brisket.
- If desired, coarsely chop cabbage and add it to the pot during the last 30 minutes of cooking.
- Once finished, take everything out of the slow cooker and slice the corned beef for serving.
Notes
For added flavor, you can include carrots or other root vegetables with the potatoes.
Ensure the brisket size fits your slow cooker; if too large, consider cutting it in half.
