Description

  • 2.25 lb bone-in skin-on chicken thighs
  • 2 tablespoons busy cooks bbq rub
  • ⅓ cup busy cooks simple bbq sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Pinch of salt and pepper
  • 1 teaspoon thyme or oregano
  • 12 teaspoon fruit preserves or jam (apricot, peach, or cherry)
  • ½ teaspoon crushed red pepper flakes (optional)


Instructions

  1. Pat the chicken thighs dry and season with busy cooks BBQ rub, ensuring it sticks well.
  2. Place the chicken thighs skin-side up in the slow cooker and drizzle ⅓ cup of the simple BBQ sauce on top. Add optional toppings if desired.
  3. Cover and cook on high for 3 hours.
  4. Once cooked, transfer the chicken to a foil-lined baking sheet, skin-side up. Brush with more BBQ sauce and broil for 2–3 minutes until the skin is caramelized.
  5. Serve the chicken whole or shred it for use in sandwiches, tacos, or salads.

Notes

Allow the chicken to rest for a few minutes after broiling for easier shredding.
The BBQ rub and sauce can be adjusted according to personal taste preferences.
Leftover chicken can be stored in the refrigerator for up to 3 days.
