Description

Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion diced
  • 2 garlic cloves minced, optional
  • 2 pounds block processed cheese such as velveeta, cubed
  • 20 ounces canned tomatoes with green chiles such as rotel, two 10 ounce cans
  • 1 teaspoon chili powder optional


Instructions

  1. In a large skillet over medium heat, cook the ground beef, breaking it up, for about 4 minutes.
  2. Add the diced onion and minced garlic (if using) and cook for an additional 5 minutes until the onion becomes soft.
  3. Drain the excess grease from the skillet.
  4. Reduce the heat to low and add the cubed cheese, canned tomatoes, and chili powder (if using).
  5. Stir constantly until the cheese has fully melted.
  6. Serve warm with tortilla chips.

Notes

For an extra kick, add more chili powder or hot sauce to taste.
