Description

Quick Pickled Red Onions offer an irresistible flavor with simple prep and fresh ingredients like red onions and lemon juice, perfect to enhance any meal!


Ingredients

Scale
  • 2 red onions
  • 2 teaspoons kosher salt
  • freshly cracked black pepper, to taste
  • 1/2 cup lemon juice, about 3 lemons


Instructions

  1. Slice the red onions very thin and place them in a medium bowl.
  2. Sprinkle the salt on the onions and add freshly cracked black pepper to taste (about 1/2 teaspoon is recommended).
  3. Squeeze the juice from the lemons over the onions.
  4. Stir the mixture and let it sit for at least 5 minutes; for best flavor, let it pickle for 30 minutes to 2-3 hours while stirring occasionally.
  5. Use the quick pickled onions in turkey burgers, tacos, gyros, veggie sandwiches, pozole soup, quesadillas, burrito bowls, salads—whatever you prefer!
  6. Store leftovers in the lemon and salt brine in a sealed container for up to 2 weeks.

Notes

For added flavor, adjust the amount of black pepper to your liking.
These onions can be pickled ahead for a picnic or party to save time.
