- 1 tablespoon olive oil
- 1/2 cup diced onion (about half a medium onion)
- 1 pound lean ground beef
- 2 teaspoons minced garlic (or 1 teaspoon garlic powder)
- 15 ounce can beef broth
- 10 ounce can condensed cream of mushroom soup
- 1 cup milk
- 2 1/2 cups small uncooked pasta like rotini or penne
- 1/2 cup sour cream room temperature
- 2 tablespoons freshly chopped parsley
- salt and pepper to taste
Instructions
- In a 4-5 quart pot or deep 12-inch skillet, heat olive oil over medium heat.
- Add diced onions and sauté for 3-4 minutes until they become translucent.
- Crumble the ground beef into the skillet, cooking until it's no longer pink (about 5-6 minutes). Drain excess grease using paper towels and season with salt and pepper.
- Stir in beef broth, cream of mushroom soup, milk, garlic, and pasta, mixing well.
- Bring the mixture to a boil over medium-high heat, then reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally until the pasta is tender.
- If the sauce is thin, increase the heat to medium-low and simmer uncovered for a few minutes, stirring frequently to thicken.
- Remove from heat, mix in sour cream and parsley, then season again with salt and pepper to taste. Serve immediately, garnished with extra parsley if desired.
Notes
For extra flavor, add some grated Parmesan cheese before serving.
This dish can be customized with your choice of vegetables like peas or mushrooms.
