- 3 cups all-purpose flour
- 2 teaspoons coarse sea salt
- 1/2 teaspoon active dry yeast
- 1 ½ cups warm water
Instructions
- In a large mixing bowl, combine flour, salt, and yeast. Pour warm water into the mixture and stir with a wooden spoon until well combined. The dough will be sticky. Cover and let it rise at room temperature for 3-4 hours or in the refrigerator for up to 15 hours.
- Scoop the dough onto a floured surface and shape it into a ball. Lightly sprinkle flour on top of the dough ball and place it on parchment paper. Cover with a dry kitchen towel and let it rise for another 30 minutes. Optionally, score the dough with a bread lame at this point.
- While the dough rises, place an empty Dutch oven or cast iron pot (lid on) in the oven and preheat to 450 degrees F.
- Uncover the dough and lift the parchment paper with the dough into the preheated pot. Cover with the lid and bake for 30 minutes.
- After 30 minutes, remove the lid and bake uncovered for about an additional 15 minutes or until the top is golden brown. Remove from the oven and cool on a wire rack.
- Store the bread in an open paper bag on the counter for up to 1 week.

This bread is perfect for pairing with soups or spreads.
