- ½ cup (120ml) evaporated milk
- ¼ cup (60ml) water
- ⅓ cup (66g) granulated sugar
- 1 teaspoon (6g) salt
- 1 whole egg
- 2 egg yolks
- 1 teaspoon (5ml) vanilla extract
- 3½-4 cups (470-500g) all-purpose flour (start with 3 cups and add more as needed)
- 4 tablespoons (60g) butter, melted or at least softened
- corn oil for frying (or any neutral-flavored oil)

Instructions
- In a large bowl or stand mixer, combine lukewarm water and yeast. Let it sit for about 5 minutes until dissolved and frothy.
- Whisk together evaporated milk, sugar, salt, egg, egg yolks, and vanilla extract. Stir this mixture into the yeast mixture.
- Add about 2 cups of flour to the bowl and mix. If using a stand mixer, blend for 1-2 minutes.
- Incorporate the melted butter until the dough is sticky and smooth, adding more flour as needed.
- Turn the dough onto a floured surface and knead for 1-2 minutes. Transfer it to a greased bowl, cover with a cloth, and let it rise in a warm area for about 2 hours until doubled in size.
- Punch down the risen dough and roll it out on a floured surface to a thickness of ¼-⅓ inch.
- Cut the dough into 1½-2 inch squares and let them rest for about 10 minutes before frying them.
- Fry the dough squares in batches, ensuring not to crowd the oil, until puffed and golden brown.
- Remove from oil and place on paper towels to absorb excess oil.
- Dust with powdered sugar while hot and serve with café au lait.
