Description

These Mini Chocolate Chip Muffins are a delightful treat, combining rich chocolate flavors with a soft, fluffy texture. Simple to prepare and using everyday ingredients like sugar, butter, and chocolate chips, they are perfect for breakfast or a snack, catering to anyone who loves homemade goodies.


Ingredients

  • ½ cup sugar
  • 4 tablespoons butter
  • 1 large egg
  • ½ cup 2% milk
  • ½ teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅔ cup mini semisweet chocolate chips


Instructions

  1. Preheat the oven to 375ºF and line a mini muffin tin with paper liners or spray with cooking spray.
  2. In a large bowl, cream together sugar and butter until it's light and fluffy. Beat in the egg, then add milk and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt. Combine with the creamed mixture and mix until just combined. Gently fold in the chocolate chips.
  4. Spoon about 1 tablespoon of batter into each mini muffin cup.
  5. Bake for 10 to 12 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow muffins to cool in the pan for 5 minutes, then transfer to wire racks. Serve warm or cold.

Notes

For extra flavor, add a pinch of cinnamon to the dry ingredients.
These muffins can be stored in an airtight container for up to three days.
Feel free to substitute chocolate chips with nuts or dried fruit for a variation.
