Description

This Mexican Chicken Marinade is packed with irresistible flavors from lime juice and spices. Perfect for a quick, tasty dinner that your family will love, it’s simple to prepare and enhances chicken like no other!

Ingredients

Scale
  • 3 tablespoons olive oil or avocado oil
  • ¾ teaspoon salt
  • 2 cloves garlic minced or pressed
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano mexican oregano preferred
  • 3 tablespoons fresh lime juice about 1 large lime
  • 1 ½ – 2 ½ tablespoons diced canned chipotle peppers in adobo sauce to taste
  • 2 lbs boneless skinless chicken thighs or breasts
  • ¼ cup chopped fresh cilantro to garnish
  • lime slices to serve

Instructions

  1. In a large mixing bowl, whisk together the olive oil, salt, garlic, cumin, oregano, lime juice, and chipotle peppers until well combined.
  2. Add the chicken to the bowl (or place the chicken in a large resealable bag and pour the marinade over). Toss or massage until every piece is thoroughly coated.
  3. Cover the bowl or seal the bag and refrigerate for at least 30 minutes, up to 24 hours.
  4. Preheat the grill or grill pan to medium-high heat (see the notes for baking and air fryer instructions). Grill the chicken for 10–12 minutes, flipping every 3–4 minutes, until the thickest part reaches 165°F and the juices run clear.
  5. Remove from heat, cover loosely with foil, and rest for 3–5 minutes.
  6. Garnish with chopped cilantro and lime slices. Serve hot.

Notes

The chicken can marinate in the refrigerator for a longer time for deeper flavor.
For baking, cook the marinated chicken in the oven at 400°F for 25-30 minutes, or until cooked through.
This marinade is also great for grilling vegetables or shrimp!
