Description

La Scala Chopped Salad delivers an explosion of flavor with fresh vegetables, chickpeas, and a tangy dressing. Perfect for quick dinners or healthy meals, it’s a delightful homemade option that brings the taste of Italy to your table.


Ingredients

  • ⅓ cup extra virgin olive oil
  • ¼ cup parmesan cheese, grated
  • 3 tablespoons red wine vinegar
  • 3 teaspoons dijon mustard
  • 2 small cloves garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Pinch red pepper flakes, optional
  • 1 head iceberg lettuce, shredded
  • 1 head romaine lettuce, shredded
  • 1 15oz can chickpeas, drained
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ½ cup pepperoncinis, sliced
  • 4 ounces genoa salami, thinly sliced
  • 1 ½ cups mozzarella cheese, shredded


Instructions

  1. In a small bowl or mason jar, combine all dressing ingredients. Whisk together or shake well to blend. Refrigerate until needed.
  2. In a large bowl, mix together the shredded iceberg and romaine, chickpeas, cherry tomatoes, red onion, pepperoncinis, salami, and 1 cup of mozzarella cheese. Pour the dressing over the salad and toss gently to combine.
  3. Serve the salad immediately, topping with the remaining mozzarella cheese.
