- 2 tablespoon olive oil
- 1 pound ground beef
- 1 egg
- ⅓ cup breadcrumbs
- ⅓ cup parmesan cheese
- 2 garlic cloves, minced
- ½ teaspoon italian seasoning
- 1 cup onion, diced
- 1 cup carrots, diced
- ½ cup celery, diced
- 3 garlic cloves, minced
- 8 cups chicken broth
- 1 teaspoon italian seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup pastina
- 3 cups fresh spinach
Instructions
- In a large bowl, mix ground beef, egg, breadcrumbs, parmesan cheese, 2 minced garlic cloves, and ½ teaspoon Italian seasoning to form small meatballs.
- Heat olive oil in a large pot over medium heat. Cook the meatballs for 4-5 minutes until browned, then remove them and set aside.
- In the same pot, sauté onion, carrots, and celery for 5-6 minutes until softened. Add the remaining 3 minced garlic cloves and sauté for 30 seconds until fragrant.
- Pour in the chicken broth, adding 1 teaspoon Italian seasoning, salt, and pepper. Bring to a boil.
- Return the meatballs to the pot, reduce heat, and simmer for 10 minutes.
- Add pastina and cook for 6-8 minutes until the pasta is tender and meatballs are cooked through.
- Stir in fresh spinach and cook until wilted. Serve warm with extra parmesan cheese on top.
Notes
For a richer flavor, use homemade chicken broth.
You can substitute pastina with any small pasta like orzo if desired.
