Description

These Italian Easter Cookies are a delightful treat, featuring a simple recipe with all-purpose flour, butter, and almond extract that delivers irresistible flavors. Perfect for any gathering, these cookies are quick to prepare and will surely impress your guests!

Ingredients

Scale
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 cup butter – softened
  • 1 tsp vanilla extract
  • 2 tsp almond extract
  • 3 eggs
  • 1 cup confectioner's sugar
  • 3 tbsp heavy cream
  • 1 tsp almond extract
  • sprinkles

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper.
  2. In a large bowl, beat together the softened butter and granulated sugar until smooth.
  3. Add the eggs, vanilla extract, and almond extract, mixing until well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms without overmixing.
  6. Using a 1 Tbsp cookie scoop, roll the dough into balls and place them on the prepared cookie sheets.
  7. Bake the cookies for 12-15 minutes or until a toothpick comes out clean. Allow them to cool completely before glazing.
  8. Prepare the glaze by whisking together confectioner's sugar, heavy cream, and almond extract in a medium bowl until smooth.
  9. Once cooled, dip the tops of the cookies in the glaze and sprinkle with colorful sprinkles before serving.

Notes

Make sure to chill the dough slightly if it’s too soft to handle after mixing.
Store the cookies in an airtight container to maintain freshness for up to a week.
Feel free to experiment with different sprinkles for variety.
