- 3 lbs chicken wings flats and drumettes separated
- 1/4 cup cornstarch
- 2 tbsp light brown sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp granulated garlic
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp lemon pepper or black pepper
- 1/2 cup honey
- 1/2 cup salted butter
- 1/2 cup hot sauce
- 1 1/2 tsp paprika
- 1 1/2 tsp granulated garlic
- 1 tsp onion powder
- 1 tsp crushed red pepper flakes
- fresh parsley for garnishing
- prepared ranch dressing for serving
Instructions
- Preheat the oven to 400°F. Brush an oven-safe wire rack with oil or spray with cooking spray and set it aside.
- In a large Ziploc bag, combine cornstarch, brown sugar, baking powder, salt, granulated garlic, onion powder, and lemon pepper. Seal and shake to mix.
- Pat the wings dry with paper towels to remove moisture. Place the wings in the Ziploc bag, seal, and shake until fully coated.
- Arrange the coated wings on the wire rack without touching and bake for 20 minutes.
- For the Hot Honey Butter Sauce, melt honey, butter, and hot sauce in a small saucepan over medium heat. Once melted, add paprika, garlic powder, onion powder, and red pepper flakes, and simmer for 3-5 minutes. Divide the sauce into two bowls to avoid cross-contamination.
- After 20 minutes of baking, brush oil on both sides of the wings and cook for an additional 20 minutes or until crispy.
- Remove the wings and baste both sides with the hot honey sauce from one of the bowls. Discard the used sauce.
- Broil the wings for 5 minutes, turning as needed until crispy and at an internal temperature of 165°F.
- Transfer the wings to a platter. Garnish with fresh parsley and serve with reserved hot honey sauce and ranch dressing on the side.
- For Air Fryer: Spray the basket with cooking spray, arrange the wings, and cook for 10 minutes. Flip and cook for another 15 minutes until done.
- For Deep Frying: Deep fry the wings in vegetable or peanut oil at 350°F for 8-12 minutes, avoiding overcrowding.
Notes
Using a wire rack helps the wings crispen evenly.
Feel free to adjust the amount of red pepper flakes based on your heat preference.
