- 1 tablespoon olive oil
- 1 small onion, diced
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 3 cloves garlic, minced or pressed, or replace with 1 teaspoon garlic powder or jarred garlic
- 2 pounds lean ground beef (grass-fed 90/10)
- ⅓ cup BBQ sauce (store-bought or homemade)
- 1 cup beef broth (not condensed)
- 1 teaspoon beef better than bouillon or a beef bouillon cube
- 1 tablespoon Worcestershire sauce
- 1 teaspoon kosher salt, to taste
- ½ teaspoon ground pepper
- 8 ounces Monterey Jack cheese, shredded
- 6 brioche buns (or gluten-free buns)
Instructions
- Heat olive oil in a skillet over medium heat until warm. Add the onion and bell peppers and sauté until the veggies become soft, about 5-7 minutes.
- Add the garlic and sauté for 30 seconds until fragrant.
- Push the onions and peppers to the side of the pan. Add ground beef and cook until no longer pink, breaking it apart with a meat chopper or wooden spoon while blending it with the onions and peppers.
- Add BBQ sauce, broth, bouillon, Worcestershire sauce, salt, and pepper. Stir to combine, simmering for 10 minutes to thicken the sauce and meld flavors.
- Just before serving, stir in the shredded cheese.
- Top each bun with the beef mixture and enjoy! Optionally, toast buns with a little butter or place cut side up on a baking sheet and toast at 350°F (175°C) for 3-5 minutes.
Notes
For additional flavor, consider adding a splash of hot sauce to the beef mixture.
This dish is versatile; you can substitute ground turkey or chicken if desired.
