Description

These Ground Beef Enchiladas are packed with flavor and made easy with lean ground beef, fresh veggies, and a cheesy topping. A perfect quick dinner that your whole family will love!


Ingredients

  • 1 ½ pounds lean ground beef
  • ½ teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion diced
  • 1 bell pepper diced
  • 3 tablespoons taco seasoning
  • 8 flour tortillas soft taco size
  • 3 cups sharp cheddar cheese shredded, 1 cup reserved for the top of enchiladas
  • 20 ounces red enchilada sauce (2 cans) mild
  • green onions or cilantro optional for garnish


Instructions

  1. Preheat the oven to 375°.
  2. In a large skillet over medium-high heat, brown the ground beef and season with salt and pepper. Drain excess grease if necessary.
  3. Add olive oil to the skillet along with diced onions and bell peppers, cooking until softened.
  4. Mix in taco seasoning and water if needed, then remove from heat.
  5. Lay out flour tortillas and fill each with the beef mixture, adding shredded cheddar cheese before rolling tightly.
  6. Spread some enchilada sauce in a baking dish, place the rolled enchiladas seam-side down, and pour the remaining sauce on top.
  7. Sprinkle the reserved cheddar cheese over the enchiladas and bake for 25-30 minutes until golden brown and bubbly.
  8. Remove from oven and garnish with chopped cilantro or green onions before serving.

Notes

You can customize the fillings with black beans or corn for extra flavor.
Use your favorite toppings like sour cream or avocado for serving.
These enchiladas can be prepared in advance and baked just before serving.
