- 1 pound shredded chicken
- ½ cup diced celery
- ½ cup shredded carrot
- ½ cup diced red onion
- 1 cup greek yogurt, whole
- 1 tablespoon lemon juice
- 1 tablespoon dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika, optional
- 1 cup green grapes, quartered
- sandwich bread, for serving
Instructions
- Shred chicken into thin strips. If cooking chicken, use boneless skinless chicken breasts blanched in lightly salted water for 14-16 minutes until cooked and shreddable.
- In a large bowl, combine diced vegetables with yogurt, lemon juice, mustard, and spices. Then, add the shredded chicken and stir well.
- Gently mix in quartered grapes and taste the salad. Adjust flavors by adding more lemon or salt if necessary.
- To serve, toast some sandwich bread and add the chicken salad or serve on greens as a traditional salad or dip with crackers.
Notes
For added flavor, try substituting some of the yogurt with a little mayonnaise if preferred.
Feel free to customize by adding nuts or other fruits like apples for different textures.
