Description

Enjoy Fool Proof Chicken Parmesan, a delightful dish showcasing crispy chicken cutlets topped with rich marinara and melted mozzarella. Perfect for a quick and satisfying meal!

Ingredients

Scale
  • 1 pound boneless skinless chicken breasts cut into cutlets, and pounded 1/2 inch thick (453.6 grams)
  • salt and pepper
  • 1 cup all purpose flour (120 grams)
  • 3 large eggs
  • 1 tablespoon milk
  • 1 cup bread crumbs (112 grams)
  • 1/4 cup parmesan cheese (25 grams)
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 cup vegetable oil (198 grams or 236.5 ml)
  • 1/3 cup spaghetti sauce storebought or homemade (83.3 grams or 78.9 ml)
  • 1/2 cup mozzarella shredded (56.5 grams)

Instructions

  1. Line a rimmed baking sheet with aluminum foil and place a wire cooling rack on top.
  2. Slice the chicken breasts in half, butterfly style. Pound any thick parts to about half an inch. Pat the chicken dry and season with salt and pepper.
  3. Place flour on a plate. In a shallow dish, whisk eggs with milk. Combine breadcrumbs, Parmesan cheese, basil, garlic powder, and oregano in another shallow dish.
  4. Dredge each chicken breast in flour, then eggs, and finally in the seasoned breadcrumbs.
  5. Heat oil in a large skillet over medium heat until it reaches 350°F.
  6. Fry each chicken breast for 2 minutes on each side, then place on the wire rack. Tent with foil to keep warm while frying the remaining pieces.
  7. Preheat the broiler. Top each chicken piece with spaghetti sauce and mozzarella cheese, and broil for about 3 minutes until cheese lightly browns. Monitor closely to prevent burning.
  8. Serve with spaghetti.

Notes

Ensure the oil is hot enough before frying to achieve a crispy coating.
Use fresh herbs if available for enhanced flavor.
The chicken can be prepared in advance and reheated before serving.
