Description

  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 13 ounces zucchini, unpeeled
  • 1 cup semi-sweet chocolate chips, plus more for the top


Instructions

  1. Preheat the oven to 350℉ and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine flour, brown sugar, cocoa powder, baking powder, baking soda, and salt. Stir until well mixed.
  3. Add the whisked eggs, vegetable oil, milk, and vanilla extract to the dry ingredients. Mix until just combined, ensuring there are no dry spots.
  4. Grate the unpeeled zucchini and fold it into the batter along with the chocolate chips.
  5. Pour the mixture into the prepared loaf pan, adding extra chocolate chips on top if desired. Bake for 50-60 minutes, checking for doneness at 50 minutes with a toothpick.
  6. Allow the loaf to cool in the pan for an hour before slicing. Serve and enjoy!
