Description

Ingredients

  • 250 g (1¼ cup) dates pitted
  • 180 g (¾ cup) hot water
  • 120 g (½ cup) nut or seed butter of choice (e.g. peanut butter)
  • 3-4 drops of butter vanilla flavor (optional)
  • 100 g (1 cup) almond flour (ground almonds)
  • 40 g (⅓ cup) unsweetened cocoa powder
  • 15 g (2 tbsp) ground chia seeds
  • 100 g (3.5 oz) dark chocolate (e.g. 70%)


Instructions

  1. Soak the dates in hot water for about 10 minutes until soft.
  2. Preheat the oven to 180 °C (360 °F) and line a 20×20 cm (8×8 inch) baking pan with parchment paper.
  3. Blend the soaked dates along with the soaking water in a food processor or blender.
  4. Add the nut or seed butter and optional butter vanilla flavor, then blend until smooth, scraping the sides as necessary.
  5. Mix in the almond flour, cocoa powder, and ground chia seeds, pulsing a few times for integration.
  6. Chop the dark chocolate and fold it into the batter with a spoon.
  7. Spread the batter into the prepared pan, smoothing the top and optionally adding more chocolate on top.
  8. Bake for 25–30 minutes, then remove from the oven, let cool, slice, and enjoy.

Notes

For thicker brownies, consider using a smaller baking pan.
You can adjust the sweetness by varying the amount of dates used.
Store any leftovers in an airtight container for up to a week.
