- 2 pounds ground beef
- 1 large onion diced
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups beef broth
- 3 tablespoons ketchup
- 2 tablespoons worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups frozen mixed vegetables peas, carrots, corn
- 4-6 cups prepared mashed potatoes
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium-high heat, stirring occasionally for 8 to 10 minutes until thoroughly cooked, then drain.
- Remove the beef from the skillet and set aside.
- In the same skillet, melt the butter over medium heat, add the diced onion, and cook for about 5 minutes until softened.
- Sprinkle the flour over the onion mixture and stir well, cooking for 2 minutes.
- Gradually stir in the beef broth, Worcestershire sauce, ketchup, thyme, salt, pepper, and paprika. Bring to a boil while stirring constantly.
- Return the beef to the skillet, then add the frozen mixed vegetables. Reduce heat to low and simmer for 5 to 8 minutes until the mixture thickens, seasoning to taste with salt and pepper.
- Spoon the beef mixture into an ungreased 13×9 inch baking dish, then spread the prepared mashed potatoes evenly over the top, sprinkling cheese if desired.
- Bake in the preheated oven for 25 to 30 minutes or until the potatoes are golden brown and the beef mixture is bubbling around the edges.
