Description

Chicken Stroganoff offers an irresistible flavor with its tender chicken thighs, creamy sauce, and savory mushrooms. Perfect for a quick and satisfying dinner!


Ingredients

  • 1 ½ pounds chicken thighs diced
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¾ cup onion diced
  • 8-ounce package white mushrooms sliced
  • 2 teaspoons garlic minced
  • 1 ½ cup chicken broth
  • 1 teaspoon dijon mustard
  • 1 teaspoon paprika
  • 1 cup sour cream
  • 12 ounces cooked egg noodles for serving


Instructions

  1. Heat a skillet over medium heat, add the butter, olive oil, and chicken then season with salt and pepper.
  2. Cook until the chicken is browned, about 7 minutes, then set aside.
  3. Add onion and mushrooms to the skillet and cook over medium heat until the onions are translucent and mushrooms have softened, about 6 minutes.
  4. Then add minced garlic and heat for an additional minute.
  5. Slowly pour in the chicken broth while using a wooden spoon to scrape the bottom of the pan.
  6. Mix in Dijon mustard and paprika, then let it simmer until slightly reduced, about 7 minutes.
  7. Remove from heat, whisk in the sour cream, and season with salt and pepper to taste.
  8. Return the chicken to the skillet and let it simmer for 4-5 minutes.
  9. Cool slightly before serving over prepared egg noodles.

Notes

For extra flavor, consider adding fresh herbs like parsley or thyme before serving.
