- 6 bone-in, skin-on chicken thighs
- salt and black pepper, to taste
- 2 tablespoons olive oil
- 12 ounces italian sausage (sweet or hot), sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 8 ounces mushrooms, sliced
- 5 cloves garlic, minced
- ½ cup dry white wine
- ½ cup chicken broth
- 2 tablespoons white wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- fresh parsley, chopped (for garnish)
Instructions
- Pat chicken dry and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken skin-side down until deeply golden and crispy, about 6–8 minutes; flip and cook for 3–4 minutes more. Remove and set aside.
- In the same skillet, add sausage and cook until browned on both sides. Remove and set aside with the chicken.
- Add bell peppers and mushrooms to the skillet, cooking until softened and lightly caramelized, scraping up any browned bits. Stir in garlic and cook for 30 seconds until fragrant.
- Pour in white wine and simmer for 2–3 minutes to reduce slightly. Add chicken broth, vinegar, oregano, and red pepper flakes, stirring to combine.
- Return chicken and sausage to the skillet, reduce heat to medium-low, cover, and simmer for 20–25 minutes, or until chicken is cooked through and tender.
- Taste and adjust seasoning if needed. Garnish with fresh parsley and serve hot.
Notes
For a spicier dish, add more crushed red pepper flakes according to your preference.
Serve over rice or with crusty bread to soak up the sauce.
