- 3/4 cup mayonnaise
- 2 tablespoons parmesan cheese fresh, finely grated
- 2 filets anchovies minced (1 teaspoon of anchovy paste optional)
- 1 tablespoon lemon juice freshly squeezed, more to taste
- 1 teaspoon worcestershire sauce
- 1 teaspoon dijon mustard
- salt and pepper to taste
- 8 oz rotini pasta
- 2 hearts romaine lettuce
- shredded rotisserie chicken OR chopped chicken breast
- croutons
- parmesan cheese for topping
Instructions
- Combine minced garlic, mayonnaise, parmesan, anchovies, lemon juice, Worcestershire sauce, and Dijon mustard in a large bowl and whisk well. Season with salt and pepper as needed, then refrigerate the dressing.
- In salted water, boil the rotini pasta according to package instructions. Drain and rinse under cold water, then transfer to a large mixing bowl.
- Chop the lettuce and add it to the bowl with the pasta. Incorporate the chicken and drizzle the dressing over the mixture, tossing to combine.
- Fold in croutons and additional parmesan, tossing lightly again before serving.
Notes
For extra flavor, let the dressing sit in the fridge for a little longer before tossing it with the salad.
