Description

Ingredients

  • 3 cloves garlic minced
  • 3/4 cup mayonnaise
  • 2 tablespoons parmesan cheese fresh, finely grated
  • 2 filets anchovies minced (1 teaspoon of anchovy paste optional)
  • 1 tablespoon lemon juice freshly squeezed, more to taste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon dijon mustard
  • salt and pepper to taste
  • 8 oz rotini pasta
  • 2 hearts romaine lettuce
  • shredded rotisserie chicken OR chopped chicken breast
  • croutons
  • parmesan cheese for topping


Instructions

  1. Combine minced garlic, mayonnaise, parmesan, anchovies, lemon juice, Worcestershire sauce, and Dijon mustard in a large bowl and whisk well. Season with salt and pepper as needed, then refrigerate the dressing.
  2. In salted water, boil the rotini pasta according to package instructions. Drain and rinse under cold water, then transfer to a large mixing bowl.
  3. Chop the lettuce and add it to the bowl with the pasta. Incorporate the chicken and drizzle the dressing over the mixture, tossing to combine.
  4. Fold in croutons and additional parmesan, tossing lightly again before serving.

Notes

For extra flavor, let the dressing sit in the fridge for a little longer before tossing it with the salad.
Feel free to substitute the chicken with grilled shrimp or tofu for a different protein option.
