Description

This Chicago Style Deep Dish Pizza features a buttery crust and layers of cheese topped with rich sauce, making it an ideal comfort food for gatherings or quick dinners at home.


Ingredients

  • ½ cup warm water
  • 3 tablespoons olive oil
  • 2 tablespoons sugar
  • 1 ¼ teaspoons instant yeast
  • 2- cups all-purpose flour
  • 2 tablespoons yellow cornmeal or coarse semolina flour
  • 1 ½ teaspoons kosher salt
  • 2 cups mozzarella cheese freshly grated
  • ¼ cup + 2 tablespoons parmesan cheese divided
  • 1 1/3 cups pizza sauce
  • 1 tablespoon cornmeal of course semolina flour
  • 1 tablespoon olive oil


Instructions

  1. In a stand mixer, combine warm water, olive oil, sugar, and instant yeast using a fork.
  2. Attach the dough hook and add 2 cups of flour, cornmeal, and kosher salt.
  3. Knead the dough until it forms around the hook. If sticky, gradually add more flour until soft dough forms.
  4. Transfer the dough to a greased bowl, cover, and let rise until doubled, about 1 hour.
  5. Preheat your oven to 425°F in the last 10 minutes of the rising time.
  6. Once risen, roll out the dough on a floured surface into a 12-inch circle.
  7. Transfer the dough to a 9-inch cake or cast-iron pan, allowing it to drape over the sides.
  8. Press the dough into the pan and trim any excess if necessary.
  9. Sprinkle mozzarella and ¼ cup parmesan cheese evenly on the crust.
  10. Spoon the pizza sauce over the cheese, then add the remaining parmesan on top.
  11. Brush the exposed crust with olive oil for crispness during baking.
  12. Bake for 12 minutes, then cover loosely with foil and bake for an additional 8-12 minutes until the crust is golden and filling is melted.
  13. Remove from the oven, slice, and serve hot.

Notes

Let the dough rise in a warm place for best results.
For added flavor, consider using a mix of cheeses or toppings as preferred.
