- 3 tablespoons olive oil
- 2 tablespoons sugar
- 1 ¼ teaspoons instant yeast
- 2- ⅓ cups all-purpose flour
- 2 tablespoons yellow cornmeal or coarse semolina flour
- 1 ½ teaspoons kosher salt
- 2 cups mozzarella cheese freshly grated
- ¼ cup + 2 tablespoons parmesan cheese divided
- 1 1/3 cups pizza sauce
- 1 tablespoon cornmeal of course semolina flour
- 1 tablespoon olive oil
Instructions
- In a stand mixer, combine warm water, olive oil, sugar, and instant yeast using a fork.
- Attach the dough hook and add 2 cups of flour, cornmeal, and kosher salt.
- Knead the dough until it forms around the hook. If sticky, gradually add more flour until soft dough forms.
- Transfer the dough to a greased bowl, cover, and let rise until doubled, about 1 hour.
- Preheat your oven to 425°F in the last 10 minutes of the rising time.
- Once risen, roll out the dough on a floured surface into a 12-inch circle.
- Transfer the dough to a 9-inch cake or cast-iron pan, allowing it to drape over the sides.
- Press the dough into the pan and trim any excess if necessary.
- Sprinkle mozzarella and ¼ cup parmesan cheese evenly on the crust.
- Spoon the pizza sauce over the cheese, then add the remaining parmesan on top.
- Brush the exposed crust with olive oil for crispness during baking.
- Bake for 12 minutes, then cover loosely with foil and bake for an additional 8-12 minutes until the crust is golden and filling is melted.
- Remove from the oven, slice, and serve hot.
