Description

This Cabbage Soup combines fresh vegetables and rich flavors for a satisfying and healthy meal. It’s simple to prepare and perfect for a cozy dinner with loved ones!


Ingredients

  • 2 tablespoons oil
  • 4 cups chopped green cabbage (about large head)
  • 3 large carrots, peeled and chopped
  • 2 ribs celery, finely chopped
  • 1 medium onion, finely chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon italian seasoning
  • 2 cloves garlic, finely minced
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups low sodium chicken or vegetable broth
  • 1 can diced tomatoes, 28oz/798ml


Instructions

  1. Heat oil in a large soup pot over medium heat.
  2. Add cabbage, carrots, celery, and onion; cook until onion is translucent, about 5 minutes.
  3. Stir in tomato paste, Italian seasoning, garlic, salt, and pepper; cook for 1-2 minutes.
  4. Pour in broth and diced tomatoes; bring to a simmer, cover, and reduce heat to medium-low.
  5. Simmer, stirring occasionally, until vegetables are tender, about 40-60 minutes, to desired consistency.
  6. Season to taste and serve.

Notes

Feel free to add other vegetables like bell peppers or potatoes for extra flavor and texture.
For a vegetarian option, use vegetable broth instead of chicken broth.
This soup can be stored in the refrigerator for up to 5 days.
