- 2 tablespoons oil
- 4 cups chopped green cabbage (about ⅓ large head)
- 3 large carrots, peeled and chopped
- 2 ribs celery, finely chopped
- 1 medium onion, finely chopped
- 1 tablespoon tomato paste
- 1 tablespoon italian seasoning
- 2 cloves garlic, finely minced
- 1 teaspoon salt
- ¼ teaspoon pepper
- 3 cups low sodium chicken or vegetable broth
- 1 can diced tomatoes, 28oz/798ml
Instructions
- Heat oil in a large soup pot over medium heat.
- Add cabbage, carrots, celery, and onion; cook until onion is translucent, about 5 minutes.
- Stir in tomato paste, Italian seasoning, garlic, salt, and pepper; cook for 1-2 minutes.
- Pour in broth and diced tomatoes; bring to a simmer, cover, and reduce heat to medium-low.
- Simmer, stirring occasionally, until vegetables are tender, about 40-60 minutes, to desired consistency.
- Season to taste and serve.
Notes
Feel free to add other vegetables like bell peppers or potatoes for extra flavor and texture.
For a vegetarian option, use vegetable broth instead of chicken broth.
