Instructions
- Crush the Biscoff cookies into fine crumbs.
- In a bowl, mix the cookie crumbs with softened cream cheese and heavy cream until you achieve a smooth mixture.
- Scoop the mixture and roll it into small balls.
- Place the rolled balls in the refrigerator and chill for 15 minutes.
- In a microwave or double boiler, melt the semi-sweet chocolate chips with vegetable oil until smooth.
- Dip each chilled truffle in the melted chocolate and place them back on the tray.
- Chill the chocolate-covered truffles until the coating is set.
