- 2 ripe bananas

Instructions
- Combine the cottage cheese, bananas, eggs, oats, baking powder, cinnamon, vanilla, and salt in a blender. Blend until smooth, making sure to scrape down the sides as needed.
- Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Pour approximately ¼ cup of the batter onto the skillet for each pancake. Cook for 2–3 minutes until bubbles appear and the edges look set.
- Flip the pancakes and cook for an additional 1–2 minutes until golden and fully cooked.
- Serve the pancakes warm topped with sliced bananas, berries, maple syrup, or extra cottage cheese.
Notes
Make sure the bananas are very ripe for the best sweetness.
