- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup packed light brown sugar
- 1/2 cup vegetable or canola oil
- 1 1/2 tsp vanilla extract
- 2 large eggs
- 1 1/2 cups mashed bananas about 2-3 small bananas
- 1 cup semi sweet or milk chocolate chips
Instructions
- Preheat the oven to 350°F and line a standard 12 cup muffin pan with paper liners or spray with cooking spray.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, mix together sugar, eggs, oil, vanilla extract, and mashed bananas until combined. The batter may be lumpy due to the bananas.
- Add the flour mixture to the wet ingredients and stir until fully moistened. Fold in 2/3 cup of chocolate chips, keeping 1/3 cup aside for topping.
- Divide the batter evenly among the muffin cups, filling them about 2/3 full. Sprinkle the tops with the reserved chocolate chips.
- Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a cooling rack. Allow to cool completely before storing.
