Description

  • 67 cups zucchini about 6 small or 3 large, sliced into ½-inch half moons
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon dried parsley
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • pinch of red pepper flakes optional
  • 1 tablespoon fresh lemon juice


Instructions

  1. Preheat the air fryer to 400°F for 2–3 minutes with the basket inserted.
  2. In a large bowl, combine the sliced zucchini with olive oil, salt, parsley, garlic powder, onion powder, smoked paprika, and red pepper flakes (if desired), mixing until fully coated.
  3. Place the zucchini in the air fryer basket in a single layer, frying in batches if necessary.
  4. Air fry for 9–11 minutes, tossing every 3 minutes, until the zucchini is golden around the edges and tender.
  5. Drizzle fresh lemon juice over the zucchini and toss gently. Adjust seasoning with extra salt if needed and serve hot.
